Convert documentation text docs to markdown
Description
It's a bit frustrating to have to download the binary files to view - would be much nicer if we could replace any relevant documents with markdown versions, as this is nicely displayed in-brower on GitHub (this obviously won't be acceptable for certain filetypes like .mm and .xls).
